Roasted Red Pepper
Soup
Makes 1-2 Servings (16 Ounces)
This beautiful and vibrant soup is loaded with antioxidants and lycopene
(good for the prostate), and is equally delicious served warm or chilled. You
can play with the flavor by finishing it with more chopped basil for an
Italian-themed menu, or adding cilantro and a dash of cumin for a more
Southwestern flavor.
- 1/4 cup raw cashews, soaked 1-2 hours
- 1/2 cup water
- 1/2 teaspoon sea salt
- black pepper
- 3/4 teaspoon fresh lemon juice
- 1/2 teaspoon agave
- 1 pinch cayenne
- 1 pinch red chili flakes
- 1 cup roasted red bell peppers*
- 1 tablespoon extra virgin olive oil
- 1 large basil, leaf, chopped
Blend all the ingredients, except the basil, in a blender until smooth.
Heat the mixture in a saucepan until slightly warmed. Pour into serving bowls,
garnish with chopped basil, and serve
*For easy roasted bell peppers, halve and seed two red peppers, brush
with olive oil, and place under a broiler for 5-7 minutes, until the skin is
slightly blackened. Use a sharp knife to remove the skin.
