It’s true what they say, we can’t be superstars at everything. Even if you’re the best mom in the world, a great house keeper and an amazing cook, if baking is not your strong suit, don’t worry. For those of us who can’t seem to get those baking skills in order here are some easy to make treats that don’t require any actual baking. When the kids are begging for cookies or you need a special something to take along to a book club or a dinner party, check out these easy and delicious crowd pleasers.
Roasted Peaches – This recipe will take you no time. Plus it’s a delicious and a healthy alternative to pie.
Ingredients:
- 4 fresh ripe peaches, cut in half, pits removed
- 1 Tbsp butter
- 2 Tbsp brown sugar
- 1/8 tsp cinnamon
- Vanilla ice cream or Greek yours for serving (optional)
Directions:
- Preheat the oven to 375 degrees.
- Place the peaches cut-side up in a baking dish. Fill each peach cavity with a bit of butter, brown sugar, and a dash of cinnamon. Pour enough water in the bottom of the pan to come ½ inch up the side of the pan.
- Bake 35 to 40 minutes, until the flesh has softened and the tops are browned.
- Serve warm, with the toppings of your choice.
Cappuccino Chip Bars – Sounds fancy, right? These no bake bars are so easy to whip up and even easier to eat!
Ingredients:
- 1/4 cup butter
- 1/4 cup honey
- 1/3 cup brown sugar
- 2 teaspoons instant coffee
- 1/4 cup cocoa powder
- 1 1/2 cups rolled oats
- 2 1/4 cups cocoa Rice Krispie cereal
- 1/2 cup miniature chocolate chip
- Place the butter, honey, and sugar in a saucepan. Heat over low-medium heat until melted. Remove from heat. Stir in the instant coffee and cocoa powder. Stir until dissolved.
- Add the oats and stir until covered. Slowly add the cereal and stir until completely coated. Let cool for 5-7 minutes. Stir in the chocolate chips.
- Press the mixture firmly into a buttered 8×8 baking pan. Let set. Cut into 10-12 bars. Store in a sealed container.
Chocolate Covered Potato Chips – Want something with a little salty-sweet goodness that your guests will absolutely swoon over? Then you have to try these.
Ingredients:
- 1½ cups chocolate chips (milk, semi-sweet, dark is your choice)
- 1 (15.25 ounce bag) bag ridge-cut potato chips
Directions:
1. Place chocolate chips in a heat resistant bowl and place over a pot of simmering water. (make sure the water doesn’t touch the bottom of the bowl)
2. Completely melt chocolate until smooth and begin dipping the chips, about ½ way.
3. Shake off any excess chocolate and place chips onto a baking sheet lined with wax paper.
4. Allow chocolate covered chips to dry completely before serving.
5. Store in an airtight container for up to 1 week.
Makes 1 (15 ounce) bag
Light Mocha Tiramisu – This one sounds like it would take days of slaving away in the kitchen, but this make-ahead recipe will take almost no time.
Peanut Butter Banana Quesadillas – Want to give the kiddos something special that they’ll go nuts for? These are so easy!
Ingredients:
- 1.5 Cups of International Delight Mocha Light Iced Coffee
- 16 oz Low Fat Cream Cheese
- 16 oz Light Whipped Topping
- 3 oz Lady Fingers
- 1/3 Cup of Cocoa
- 1/2 Confectioners Sugar (optional)
Directions:
- In a blender, combine the International Delight Mocha Light Iced Coffee, cream cheese and whipped topping until it is a smooth consistency. If you prefer really sweet desserts you can also add 1/2 cup of confectioner sugar, this is optional.
- Cut all of the lady fingers into halves. Take individual serving cups or small mason jars and begin by layering 2 lady finger halves, a sprinkle of cocoa and then top with a layer of the creamy coffee mixture. Do this 3 times and top with remaining creamy mixture.
- Refrigerate for at least 4 hours before serving. Top with additional whipped topping and a sprinkle of cocoa if you would like.
Peanut Butter Banana Quesadillas – Want to give the kiddos something special that they’ll go nuts for? These are so easy!
- 1 8-inch whole wheat tortilla
- 2 Tbsp natural peanut butter
- ½ medium banana
- 1 Tbsp semi-sweet chocolate chips
- Spread the peanut butter over the surface of the tortilla.
- Slice the banana very thinly and then arrange the slices over half of the tortilla. Sprinkle the chocolate chips over the banana slices and then fold the tortilla in half.
- Cook the quesadilla in a skillet over medium-low heat until golden brown and crispy on both sides.
